So before my meat quit day (still not sure what I should call it) I wanted to figure out which parts of my every day life would be the most difficult to change. Currently I'm still on "summer break" from my job, but I will be starting it back up in a week. For lunch I usually take a lean cuisine because it is remotely inexpensive and extremely easy to grab on my way out the door. Although they do have some meatless options it is extremely limited. My fiance suggested that I try Amy's frozen meals. I was a bit skeptic since anything with the word "ORGANIC" in it usually means that it's way over priced. With my upcoming wedding every penny counts, but I decided to go to the local grocery and check them out. I was ecstatic to find out that Amy's was the exact same price as Lean Cuisine!!! I decided to buy one to see if they were actually any good and guess what?!?! they are actually even more delicious than any other frozen dinner I've had!! I had the stuffed pasta shells bowl. It is 310 calories and has 19grams of protein!!! Talk about filling!
They do however have quite a bit of cholesterol so if you're watching your cholesterol intake go the the
website and search for meals with low fat/cholesterol. Here is the website:

Amy's also has different types of cuisines such as Asian, Italian, Indian, MEXICAN!!, breakfast, desserts, soups, pizzas. You can probably become a vegetarian, live off of Amy's and never cook again!! I love to cook so I don't mind, but I don't have any kids to look after which I think makes it easier (and I actually have a little bit of time!) Which reminds me I wanted to tell you about this awesome recipe I found on the American Diabetes Association website. I have a huge sweet tooth. I mean there have several times that I have gone to a restaurant and skipped my meal and ordered a dessert that sounded too delicious to pass up. Well since my fiance (possibly) has diabetes I have been on the search for new recipes. I've tried a few different ones, but this one is the best so far. I made a chocolate drizzled peanut butter cake (my mouth watered as I typed that). Although the recipe was already healthy I substituted some things: I used organic whole wheat flour instead of regular flour; I used brown sugar made by Splenda; and I used soy milk instead of buttermilk (couldn't find it at the store haha). Not to toot my own horn, but my goodness it was delicious!! Usually when I make cakes it takes us a week or so to finish it, but this cake was gone in less than 3 days... between two people that's pretty good!! Here is the link to the recipe:

I hope this is helpful to someone some day ;) I'm excited about changing my lifestyle. Hope you might consider it too! Have a great day!!

First Post!!
Hello! I decided to start a blog because I will soon become a vegetarian. I have looked through the internet for a place where I can get an idea of the obstacles and challenges one faces when becoming a vegetarian and I have found none. So I decided to start a blog of my own experiences and maybe I can help others (that's if anyone actually subscribes and reads this haha).
The main reason why I decided to become a vegetarian is because my fiance was diagnosed with type 2 diabetes about a month ago. He is 26 years old, not over weight and diabetes doesn't run in his family. In other words he's the least likely person to have it, but he does (or so the doctor thinks... we're not 100% sure). Either way this was a huge wake up call for the both of us. We began to research healthy diets and eating habits. A friend of ours took a class in medical school about the china study. He's always been a thin and fit person but had cholestorel and high blood pressure issues because of his horrible eating habits. After he took the class he decided to give up meat and any animal products. He is currently in the best shape of his life (both physically and internally). After hearing his story we were curious to see what this china study was all about. For anyone that's never heard of this and is having health issues (or those of you who have horrible eating habits) I highly suggest that you read this book.

I must say though as of right now I haven't finished the book, but that is the point of this blog. I want to be able to share ALL of my experiences. My transformation from a chubby meat eater to a lean, fit and healthy vegetarian! The plan as of right now is eat my favorite foods (ex. hamburgers, pepperoni pizza, anything with chicken, etc.). I haven't decided when my official first day of vegetarianism is, but I will blog as soon as I decide. Wish me luck!
On a side note: Tonight I'm going to dinner to a vegetarian restaurant. I'm trying to see what it's like to go out to eat as a vegetarian. I think its going to be a whole new experience. There are very few in my city, but I hear that it is pretty good. We'll see!
